Hamburger: Used or Unused?

Perusing the menu at our local Japanese restaurant and came across the following:


Call me crazy, but I prefer my hamburger unused.  :(

    Probably means its made with Japanese beef (like Kobe beef), which maybe perceived as superior by the locals.
